Douglas Seabrook was the longest serving chairman of judges at the Royal Melbourne Wine Show, he adjudicated over the most memorable vintages for thirty years and held a passion for great Riesling. From a single superb site at Springton in the Adelaide Hills, an exceptional sixty year old vineyard which lies in a secluded valley and ripens much later than most other sites on the surrounding hills. It yields fruit of marvelous minerality, pristine of citrus fruit and elegant of spice, offering superlative finesse as the wine continues to evolve and become more complex with age.

An exciting cépage which may vary slightly from year to year, mostly a Shiraz wine sourced off younger Heathcote plantings, a tenth of Mourverdre and small percentage of Riesling. Mourverdre contributes plummy fruit to the nose, juciness and flesh to the palate. Riesling adds an aromatic lift within a slightly spiced floral perfume. An engagingly aromatic, satisfyingly proportioned and generously flavoured wine, to match with rare breast of duck dressed in rhubarb or charred scotch filet under mushroom jus.

Prophet's Rock are a member of Sustainable Winegrowing New Zealand, the aim is to make the most articulate Central Otago wines in the most natural way, from fruit grown to an environmentally balanced vineyard. There's a single hectare of Riesling at Rocky Point vineyard, planted to opportune schist rock soils, it receives a lot of attention from the devout vineyard team. Yields are extremely low, averaging only 300 cases per vintage. A wild yeast ferment in small vessels and a term of age on sedimentery lees makes a structured Riesling style of vibrant floral citrus over strong underlying minerality.

Medium sweet dry at 69 grams residual sugar, its bouquet of florals and honeysuckle, oranges and lime precedes a succulent palate in perfect balance, candied apple flavours and white peach are balanced by divine minerality. Pressing Matters are also significantly lower in alcohol than most Australian Rieslings, the intense fruit flavours are balanced by an amazing natural acidity. Greg Melick is Tasmania's most senior barrister, he carries rank in the Australian Reserves and nurtures a penchant for fine Burgundy. A consuming desire to make his own wine led him to a northeasterly slope along Tasmania's Coal River, fourteen remarkable hectares of well drained viticulture which had previously been used for grazing. Yields are kept very low and Melick's Rieslings are finished at four different levels of residual sugar, R0 being bone dry, simply superb for haute cuisine, very much in the timeless styling defined by the savoury classics of Alsace and Mosel.

There are two places of the most profound provenance along Coal River Valley called Belmont and Richmond, just a short drive northeast of Hobart. Both are a part of the early Australian experience, places of great historical import, sites that were selected during first settlement on the basis of their fertile endowments and promise of pastoral opulence. The vineyards Cooinda Vale and Butchers Hill were trained to yield a restricted harvest of the most exclusive Tasmania Riesling. Its prominent nose of indulgent perfumes, white jasmines, lemon zest and peach, a mesmerisingly mandarin palate, moreish and mineral.

Pewsey Vale once succumbed to the fate of so many of Australia's great, foundation vineyards, falling into disuse as a result of severe economic hardship. The site's potential was rediscovered at a time when only the history books recorded any existence of the original plantings. The long ripening periods at such altitudes encourage rich flavour profiles, known today as classic Pewsey Vale. The winemaking is simple and natural, hand picked grapes are whole bunch pressed directly to older oak barrels for ferment by indigenous yeasts.

Inspired by elder bottles of Pewsey Vale Riesling, Yalumba resolved to make an early harvest wine with lower alcohol, a fine balance of natural acids and idyllic levels of residual sugar. Prima is made from grapes picked three to four weeks before the rest of the vineyard. Chosen for their fine citrus flavours, grapes are carefully selected when their natural sugar levels are near 10° Baume. The wine is finished to a semi dry style which retains some of the fruit in balance with chalky mineral acidity, exhibiting purity of style, as it evoves layers of toastyness and spice.

The grapes themselves are picked from the oldest vines, established to contoured rows in 1962. This exceptional wine already shows signs of bottle development immediately upon release.

The Pewsey Vale property was first planted to Riesling by Joseph Gilbert in 1847. The site was later purchased by well known grazier Geoff Angas Parsons, who in 1961 invited his friend Wyndham Hill Smith to jointly develop the historic vineyard. They believed the site could produce delicate Rieslings in the Germanic style. High in the Eden Valley's low fertility, grey and sandy loam soils, a prolonged ripening late into the cool autumn season develops recognizably consistent flavour profiles, today known as classic Pewsey Vale.

The tall ship Evening Star docked at Port Phillip harbour in February 1856 carrying the Pettavel family, destined for the expanding vineyards of Geelong. Experienced growers recruited in Switzerland were central to the expansion of viticulture and winemaking throughout the Bellarine Peninsula. The Evening Star range is focused on articulating the vibrant Geelong fruit characters, a course of cool ferments serves to retain the lifted elegant, floral aromas and crisp citrus, apple pear flavours, which linger on a fine, mineral acid texture.
